Meatloaf... yuck!

That has been my typical response to the thought of meatloaf... until recently. I don't cook with too much ground beef. Instead, we use a lot of turkey in this household. So... I have started making some pretty mean meatloaf meals!
I'm also usually a very strict recipe follower.... but not when it comes to my meatloaf. Here's my "recipe."

Steph's Meatloaf:
Preheat oven to 350 degrees
sautee about a quarter of an onion and 3 cloves of garlic in butter until soft (I also added some mushrooms this time... yum!)
1 pk of ground turkey (usually 20oz)
1 egg
1/2 - 3/4 cup of bread crumbs (I just been using plain progresso ones)
a bunch of shakes of Italian seasoning (this is what makes it!)
a few shakes of salt and pepper in there too
oh and a couple squirts of ketchup
(if I forgot something I'll let you know in a later post after I make it again!)

I can't really stand to touch the ground turkey, so I put it in a bowl and use a spatula to moosh it all around into meatloafy goodness!

After it's all mooshed together, moosh it into a bread pan and bake for 50-60 min (or as long as it needs to be cooked all the way through)

Then.... I've also been loving chopped and baked potatos. So while the meatloaf gets started, get a cookie sheet and spray it down with some Pam and sprinkle salt on it. Chop up a couple of potatos (tonight I used red potatos), put them on the sheet, spray and salt them and pop them in the oven!

Boil some frozen veggies (if you want your meal to be exaltly like mine it was frozen greenbeans) and voila! A meatloaf masterpiece!!! Or at least I think so! (hubby agrees on this one!)

Hello New Blog!

     Well now that I'm a married lady, I decided that we needed a blog for our adventures and my other blog www.sesmithcreations.blogspot.com should be used solely for the photography biz that I one day soon hope to have up and running!!! So here goes! Stay tuned for some food  (accompanied by lots of pictures of the recipe of choice), fun, and tales of our adventures.
